make-it monday: protein brainpower pancakes...
Today’s pancake recipe is a good old American dish that’s perfect for breakfast (especially Sunday mornings) - but what makes these brain powered puppies stand out is that they: 1) contain no flour; 2) are packed full of protein; and 3) are literally brain food! I don't know about you, but I have the hardest time getting my little one's to eat eggs, so I'm always on the lookout for ways to "sneak" eggs into my little one's meals (especially breakfast... after all, it is the most important meal of the day). These protein-packed pancakes are delicious and easy to make for breakfast. + they'll help fuel your children's brains.
A healthy, balanced diet is not just good for kid's bodies, it's good for their brains, too. The right foods can improve brain function, memory, and concentration. Like our body, the brain absorbs nutrients from the foods we eat, and brain "superfoods" can help children boost their brainpower. Today's recipe includes 2 brain superfoods: eggs + bananas. Eggs are a great source of protein, and their yolks have choline, an important nutrient for memory development. Bananas are great fuel for you child’s brain – and they are help increase your little one’s concentration power too.
So if you’re looking for a simple breakfast, these brainpower pancakes are an easy choice. Plus, they are good for adults too. Enjoy and happy cooking!
protein brainpower pancakes
total time: about 20 minutes
makes 6-8 pancakes
ingredients
- 2 mashed bananas
- 4 beaten eggs
- 1/4 tsp baking powder
- butter
- optional: mini chocolate chips
- optional: sliced fruit, maple syrup, nut butter for serving!
make-it
1. In a medium bowl, combine the mashed bananas, beaten eggs, and baking powder. Whisk until completely combined (and the baking powder has been distributed evenly).
2. On a griddle or a large skillet, melt 2 tsp butter over medium heat until melted and hot. Drop 1/4 cup batter onto the griddle. Cook for 2 minutes, or until the edged begin to set, then sprinkle with 1 tsp mini chocolate chips. Gently flip the pancake and cook for one additional minute, or until golden. Repeat with remaining batter.
3. Voila! Serve warm, with maple syrup, nut butter, sliced fruit, or any other favorite pancake topping.
