If there’s one summer treat I’ve been craving as the weather’s been getting warmer, it would have to be popsicles. These fruity frozen sweets seem to be all the rage right now and there are dozens of delicious recipes I keep coming across. Each year, as the sun gets hotter and hotter here in Arizona, the kids and I set out to create a few different standard popsicle recipes, that are as equally tasty as they are healthy (I like any kind of popsicle that can double as a sweet treat AND as a breakfast replacement... popsicles for breakfast? Yep! I'm that kind of mom!). These Strawberry Popsicles are as refreshing + healthy as they are beautiful. They’re so simple to make, you have no excuse not to try them! strawberry popsicles (or ice pops)

 

ingredients

  • 2 1/4 cups organic strawberries (stems removed)
  • 1 tbsp lemon juice
  • 1 tbsp honey (or agave nectar)

 

make-it

1. Combine all the ingredients in a food processor or blender, and puree. 

2. Pour the mixture into popsicle molds and freeze. For the Zuku molds I used, the popsicles set in about 5 minutes. For traditional popsicle molds, freeze for 4 hours. 

3. Voila! Perfectly sweet and sugar-free strawberry popsicles! Store in the freezer for up to 4 weeks (though I doubt any longer would do you harm!). 

Tip: I love these Zoku ice molds from Sur La Table. Your popsicles are set within in minutes instead of hours! A huge time saver here in AZ, where summer temps often surpass the 100s!
