make-it monday: Powdered Cake Donuts...

Happy Thursday! One of our favorite breakfast treats are DONUTS! Especially if they are homemade! A few years ago I bought a set of Wilton Donuts Pans to try making baked donuts at home...and let me tell you, they've changed the way we think about donuts around here!

Homemade baked donuts are so light and fluffy + baked donuts are so much healthier for you! And bonus: they are delicious! We've been experimenting around here with various versions, all of which I plan to share down the line. 

But to get you started, today I'm sharing a classic: Baked Powdered Cake Donuts! These are my son's favorite (I think he just loves that he gets to lick his fingers after each bite!). I hope you'll enjoy this easy starter donut!

Baked Powdered Cake Donuts

active time: 30 min
makes 12 donuts

ingredients

  • 2 cups cake flour
  • 3/4 cup granulated sugar
  • 2 tsp baking powder
  • 1/4 tsp nutmeg
  • 1 tsp salt
  • 3/4 cup buttermilk
  • 1 tsp vanilla
  • 2 eggs, lightly beaten
  • 2 tbs butter, melted
  • 2/3 cup confectioners' sugar
  • Canola Oil Spray

make it

  1. Preheat oven to 425 degrees. Spray Donut Pan with nonstick cooking spray. 
  2. In a large bowl, whisk together flour, sugar, baking powder, salt, and nutmeg, until well combined. 
  3. In a separate, smaller bowl, beat eggs until white and yolk are somewhat combined, then pour in buttermilk followed by the melted and cooled butter and vanilla. Beat until just combined.
  4. Pour wet mixture over dry ingredient mixture, and until just combined and thick. Do not over-mix.
  5. Pour mixture into a piping bag or ziploc plastic bag and snip off a 1/2 inch hole. Pipe donut batter into greased donut pan, filling cavities halfway.
  6. Bake in oven for 5-7 minutes or until the top of the donuts spring back when touched, or until a toothpick inserted in center comes out clean.
  7. Let donuts cool in pan for 4 minutes before removing. Remove donuts and let cool on a wire rack while you prepare a station for powdering.
  8. Add powdered sugar to a brown paper bag or ziploc plastic bag, making sure there is enough empty space for donuts to move around. Working one at a time, drop donuts into bag filled with powdered sugar. Close bag and shake gently to coat in sugar. Remove and set on a plate to dry. Repeat with remaining donuts. 

Storage

Baked homemade donuts are best served fresh; however, if you don't eat all of them, you can save them in an airtight container or ziplock bag, and reheat for a few seconds in the microwave the following day - but I wouldn't know, we always eat all 12... it's hard not to!
