make-it monday: spinach pancakes...

Happy Monday! With March upon us, I don't know about you, but I've got all things green on the brain. Yes, Saint Patrick's Day is nearly upon us, and it's time to start making plans for the 17th!  Whether you're Irish or not, staying in, or hosting a few friends, this holiday is not to be missed. And over the next week I'll be sharing a few of my favorite Saint Patrick's Day themed specialties coming your way. First up, these easy and colorful spinach silver-dollar pancakes. And  yes, you read that correct: spinach pancakes! Don't let the name scare you, these are a must for your little ones - especially if they balk at the idea of vegetables! This is a "sneaky" way to get some veggies in your kiddos breakfast lineup + who wouldn't love to wake up to miniature green pancakes on the greenest holiday of the year!?

You can whip up a batch to serve to your family for Saint Patrick's Day brunch or simply keep them on hand to snack on this month when you want some greens in your life.

spinach pancakes 

active time: 20 minutes
total time: 30 minutes
makes: 20 pancakes

 

ingredients

  • 1 cup packed spinach
  • 1 cup buttermilk OR my preference: easy homemade vegan "buttermilk"
  • 1 large egg
  • 1 tbs canola oil
  • 1 cup whole wheat flour
  • 1 tbs sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • butter, maple syrup and/or preserves for serving, if desired

make it

  1. In a blender, combine spinach, buttermilk, egg, and oil - blend until smooth. 
  2. In a medium mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt.  
  3. Pour wet ingredients into dry ingredients, and whisk until just combined. Batter will be a nice smooth light green color. 
  4. Grease a large skillet or griddle with butter and heat on medium. Using a tablespoon, measure 1 tablespoon of batter onto the skillet, leaving enough space between each pancake for the batter to spread (depending on skillet size, I did three pancakes at a time). 
  5. Cook for about 2 minutes per batch, or until browned, flipping once. 
  6. Serve with butter and maple syrup or your favorite preserves!
