make-it monday: Chocolate Waffles...

Happy Tuesday! In honor of Valentine's Day I would love to share my family's chocolate waffle recipe!  These waffles are so light and delicious, and not the bit overly sweet! Adults and kids will both swoon over them, especially if you surprise them on Valentine's Day and use a heart-shaped waffle iron. 

I picked up this waffle iron a few years ago thinking I'd barely use it, and we now cook with it almost weekly. I mean come on? How can you not smile when you have a yummy heart-shaped chocolate waffle smiling at you in the morning?!

Chocolate Waffles

active time: 30 minutes
makes: 8-9 waffles

ingredients

  • 1/2 cup butter
  • 2 oz squares of unsweetened chocolate 
  • 2 large eggs
  • 1 cup milk
  • 1 1/2 tsp vanilla
  • 1 1/2 cups all purpose flour
  • 1 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • canola or grapeseed oil cooking spray for your waffle maker
  • strawberries, blueberries, and bananas for serving, if desired

make it

  1. In a small double boiler, melt the butter and chocolate squares, being careful not to burn the chocolate. Let cool. 
  2. Beat the eggs in a medium mixing bowl until light and fluffy. Add the milk and vanilla. 
  3. Once cool, add the butter/chocolate mixture to the mixing bowl and combine.
  4. In another mixing bowl, whisk together the flour, baking powder, sugar, salt, and cinnamon. 
  5. Combine the dry and wet ingredients and beat until smooth. 
  6. Heat your waffle maker according to the manufacture's instructions. Grease with a little oil and cook your waffles until they're nicely browned on both sides. Serve with butter and fresh fruit toppings. 

storage

I like to make large batches of this recipe and freeze them for future use! Once cooled, you can store your waffles in a freezer size ziplock baggie and place in the freezer for up to a year. To reheat simply throw in a toaster oven to warm them up!
